Walnuts are graded globally using a standardised colour and size classification that directly impacts their price, application suitability, and retail appeal. For food manufacturers, knowing the difference between grades allows better specification of ingredients and more predictable production costs. Light Halves (LH) Grade

Light Halves are the premium retail and gifting grade. Kernels are bright, light-coloured whole halves with no more than 10% quarters. They have a fresh, mild walnut flavour, maximum visual appeal, and command the highest price point. They are the preferred grade for gourmet snack packs, premium baking ingredients, and on-product garnish in chocolate, ice cream, and pastry.

Light Quarters (LQ) Grade

Light Quarter kernels offer the same bright colour profile as LH but in broken quarter-piece format. They are ideal for baking, trail mix, granola, muesli, and in-process mixing applications where whole appearance is not required. LQ offers outstanding cost-value balance without compromising on flavour or colour quality.

Light Pieces (LP) Grade

Small broken pieces, consistent in colour and flavour, ideal for ice cream manufacturing, confectionery, and bakery inclusion. The most cost-effective grade for high-volume industrial applications.
